It must be root veggie season… our daikon is ripe, and Helen gave us some beautiful carrots from her garden. We enjoyed a tasty lunch of swordfish, rice pilaf, carrots, and daikon greens. Lunch always tastes better with homegrown veggies!

Denny and Olivia brought back real Texas beef brisket (smoked by their son-in-law) to share. We enjoyed ours with rice pilaf and a side of sautéed daikon from the garden.

We used the last of the ginormous zucchini in a zucchini quiche. It’s a kind of “impossible pie” made with bisquick. The recipe came from Helen (aka grower of ginormous zucchinis)

We’re still enjoying the ginormous zucchini we got from Helen… today’s dish was zucchini casserole. It starts with ground beef, onion, and zucchini sautéed together. Helen shared a ginormous zucchini from her garden (Thank you Helen!)… it weighed in at over 4-1/2 pounds!
Such a bounty screamed for zucchini bread!
Even after having some zuke for lunch and grating 2 cups for zucchini bread, there’s still a lot left to enjoy.

It never ceases to amaze us how crafty folks can be… We enjoy tea and have some of these little tea canisters that seem too nice and sturdy to just throw into the recycle bin. We challenged Cindy to come up with a re-purpose for them, and look what she did!
