Clean out the Fridge Soup







Lunch today is ‘Clean out the Fridge Soup’. Started by making broth (soup IP setting) with the last bit of meat and a rib from a post-New Year rib roast, along with leftover goodies from holiday cooking: onion, parsley, rosemary, thyme, plus some bay leaves and peppercorns. Strained that and added it back to IP, and threw in everything else I could find in the fridge - tomato, more herbs, carrots, celery, and some dry lentils. 20 min HP and a QR later the soup was ready for finishing touches. Stirred in the meat picked from the bone, some Worcestershire sauce, more fresh herbs, and the last of a bag of spinach. Topped it off with some shredded Parmesan and (yes, you guessed it) more fresh herbs. Very tasty, and we were able to use up a lot that we had on hand.
