Cod Simmered in Coconut Curry Broth

This was a super simple one pot dish to throw together. Coconut milk, red curry paste, veggies, and fish all simmer together and dinner is ready in less than a half hour. The original recipe called for spinach as the main vegetable, but we didn’t have enough spinach, so I added red bell pepper and snow peas and carrots. We also added jalapeno to both the simmering broth and to the toppings for some extra heat. Substitute in whatever fish you have on hand, or go completely veggie. We used cod. Serve with rice (optional). Very easily adjustable recipe to your likes, and delicious!
