06/09/2018 | Chicken Pad Thai | Chicken breast, bottled Pad Thai sauce (Thai Kitchen). Had to use thin rice noodles as the store I went to didn't have the wide Pad Thai noodles. Ended up using more sauce and water than the recipe called for because the noodles weren't all the way cooked after the initial cook/sit time per the recipe (HP, 2min, QR, add veggies, stir and let sit 5 min). Added more water/sauce, sealed it back up, and HP for 1 more min, QR. This cooked the noodles, but the veggies (carrots, green/red bell peppers, sugar snap peas) got more done than I would have liked. It was still pretty tasty though, and the leftovers heat up nicely | https://thegirlonbloor.com/instant-pot-chicken-pad-thai/ |
